Description

Lampascioni di Puglia: a journey into traditional flavors

Lampascioni of Puglia, also known as “pampagoni”, “wild onions” or “cipollacci”, are wild bulbs that grow in the Apulian countryside, particularly in Salento. Harvested by hand between late summer and early autumn, lampascioni represent a delicious ingredient of Apulian cuisine. They are processed according to artisanal methods and are appreciated for their unique flavor and beneficial properties. These bulbs are in fact known for their diuretic and purifying properties, contributing to the general well-being of the body. Furthermore, they are completely natural, free of additives and dyes.

The food use of lampascioni has its roots in the thousand-year history of Puglia. Already the ancient Romans appreciated their flavor and their beneficial properties. In ancient times, they were considered a poor man’s food, but today they are sought after for their gastronomic value and health benefits. Rich in fibre, vitamins and minerals, lampascioni are perfect for enriching salads, omelettes and meat dishes, or simply enjoyed in oil or vinegar. Over the centuries, lampascioni have become a symbolic ingredient of Apulian cuisine, handed down from generation to generation.

Culinary Pairings

They are distinguished by their characteristic flavour, which oscillates between bitter and sweet, with a slightly spicy aftertaste. Their crunchy texture makes them a versatile ingredient, which lends itself to different culinary preparations. Try it with fresh cheeses, such as our Mozzarella di Bufala DOP, or incorporate them into typical Apulian dishes such as Freselle Classiche. Also perfect as an appetizer, perhaps accompanied by a glass of our Aglianico del Taburno DOCG red wine.
